Strictly handmade production methods

The flagship product of Patrone's Delicatessan is its cured hams - all produced using exclusively handmade methods. Our pride in producing the most authentic salami underscores our dedication and care for tradition.

 

Our range of pepper-cured salami includes the following:

  • Locally-sourced cured hams
  • Pork loin
  • Rigatino - a kind of pancetta from the pork loin area
  • Rigatino & Arista (a similar pork loin cut, but generally spit-roast with herbs)
  • Pork cheek
  • Shoulder of pork
  • Capocollo - cold cut made from dry-cured muscle between the neck and shoulder
  • Rolled pancetta
  • Lardo in vasca di marmo (bacon fat preserved in marble containers in accordance with a centuries-old method)
